Corn tortillas are wrapped around our shredded achiote chicken + cheese or mole black beans and sweet potatoes, smothered with our house made enchilada sauce, and topped off with shredded cheddar and monterey jack cheese. A simple and easy weeknight meal that is sure to please the whole fam.
1 order= 6 pieces, 2# oven ready foil container and serves 3-4.
To heat: cover with foil and bake at 350 degrees for about 20 minutes, remove the foil and bake for another 5-10 minutes until golden and bubbly.
